Co-founders Jacob Trimm, Bryan Cantu, and Amanda Trimm opened Barking Armadillo Brewing during a tumultuous time, launching their taproom during the first weekend of March 2020, just before the cancellation of the South by Southwest event due to coronavirus concerns. The initial reception was promising, with guests enthusiastically enjoying four house beers coupled with entertainment from arcade games and meals from the on-site food truck, Takavron.

However, as the pandemic fears escalated, customer turnout dwindled. Before the county instituted a shelter-in-place order, the co-founders proactively decided to close the taproom and pivot to a to-go model for selling beer. Currently, the brewery allows customers to purchase beer in growlers during designated hours: Tuesdays and Fridays from 2 PM to 6 PM, Saturdays from 12 PM to 6 PM, and Sundays from 12 PM to 4 PM. The food truck operates concurrently during these hours, providing customers with food options while they enjoy their beverages.

Despite the initial setbacks, including a three-month opening delay due to a significant gas leak in Georgetown that placed the brewery in an evacuation zone, the co-founders have remained committed to their mission. The brewery occupies a spacious 5,500 square foot area that encompasses a production space and a well-designed taproom with two main rooms. One room is dedicated to a bar and dining area, while the other features a fun selection of arcade games for guests.

The current lineup includes a variety of craft beers, with new creations such as a coffee milk stout and double dry-hopped IPA recently added. The Irish red ale has gained popularity among patrons, and plans are underway to introduce a strawberry witbier in the future. The brewery’s philosophy emphasizes brewing diverse styles based on the founders’ personal preferences and the interests of their community.

Community support has played a vital role in Barking Armadillo Brewing’s resilience during the pandemic.
